Casseroles by Julie Levanway

I have been overwhelmed by the response of people asking for a casserole menu. I guess not much has changed since I first started my catering business in 1991 as this was how I kept myself busy!  Good food.  Fresh ingredients every time. Reasonably priced.

For now, the way it works is these are the casseroles I’ll be making.  Some new ones will be added every couple of weeks.  So. . .all you have to do is email me with your order by 6:00 pm on Sundays.  I will make them on Mondays and deliver on Tuesdays.  All casseroles will be in freezer ready pans if you want to stock up!
This week since I’m making the Jalapeno Chicken and the Bolognese Spaghetti Pie you may place an order by 8:00 pm today, September 28 and I’ll deliver to you on Friday.
Soon I will add salads and pickup desserts too!
The offerings are:
Jalapeno Chicken                                                                                        $25.00
   Layered with crushed tortilla chips, shredded chicken breast meat,
   creamy spinach-green chiles and topped with Mexican Cheese Mix
   Serves 4.
Bolognese Spaghetti                                                                                    $22.00
   Angel Hair pasta topped with a Bolognese Meat Sauce and
   Parmesan Cheese.
   Serves 4.
Chicken and Wild Rice                                                                                 $25.00
   Wild Rice Blend combined with shredded chicken breast meat,
   artichokes, mushrooms in a light curry cream sauce
   Serves 4.
Shrimp and Grits                                                                                          $28.00
  Sauteed Shrimp, onions, and mushrooms in a creamy Creole Tomato
  Sauce over the Best-EVER cheese grits
  Serves 4.
As the weather changes I’ll add soups and stews!

Tomato-Bacon Sandwich

This tomato-bacon sandwich is far from your everyday Southern Tomato Tea Sandwich!  It is packed with lots of flavors and textures yet it is simple to put the ingredients together.

Start with a toasted bread round, add some peppery tasting arugula next, top with a slice of fresh tomato tossed with a little olive oil, and fresh chopped basil, a dollop of Remoulade Sauce and finished with some candied bacon bits.

Yep!  That is how it is done.  It does take a little prep work but so worth it.  Here is my favorite Remoulade Sauce recipe. . .

  • 2 1/2 cups mayonnaise (I use Duke’s)
  • 1 cup spicy mustard
  • 2 tablespoons fresh juice
  • 1/4 cup chopped fresh parsley
  • 1/3 cup finely diced sweet onion
  • 1/3 cup rinsed and drained chopped capers
  • Dash or two of hot sauce
  • Salt and pepper

Combine the first seven ingredients in a bowl and mix well.  Season to taste with salt and pepper.
